Delicious & Easy to Swallow Raspberry Tiramisu Recipe

Here is a recipe from the book Give Me a Solid.


Serves 8 to 12


Moist cakes are easier to swallow. And the delicious tiramisu is no exception. This raspberry version is refreshing and allows you to enjoy the taste of a fruit that can be difficult to swallow because of the seeds. What's more, since this cake doesn't contain coffee, you can enjoy it at any time of day without affecting your sleep.


Special Ingredients: Citrus liqueur, seedless raspberry jam


1 cup (250 ml) seedless raspberry jam

6 Tbsp (90 ml) citrus liqueur (e.g., Cointreau, Triple Sec, Grand Marnier)

16 oz (450 g) mascarpone cheese, room temperature

1 cup (250 ml) 35% heavy cream

1/4 cup (60 ml) sugar

1 tsp (5 ml) natural vanilla extract

28 to 40 ladyfingers, depending on the size of the dish

Powdered sugar (optional)

 

  1. In a bowl, combine the raspberry jam and 4 Tbsp (60 ml) of citrus liqueur.


  2. In a large bowl, mix 2 Tbsp (30 ml) of citrus liqueur with the mascarpone cheese.


  1. In another bowl, beat the 35% cream, sugar and vanilla with a hand mixer until soft peaks form.


  1. Using a spatula, gradually fold the whipped cream into the mascarpone cheese mixture.


  1. Cover the bottom of a deep rectangular dish measuring approximately 9 x 12 in. (23 x 30 cm) with half the ladyfingers. Feel free to break some of them to fill small spaces.


  1. Cover the lady fingers with half the raspberry jam, and then half the mascarpone mixture.


  1. Repeat the same process a second time (lady fingers, jam, cheese).


  1. Cover and refrigerate, ideally for 24 hours.

 

Serving

Sprinkle with icing sugar, if desired, before serving.
